Frutilu recipe: Easter lemon muffins
We present to you juicy muffins without added sugar, where the main character is the invigorating lemon. In every bite there is a pleasant sweet-sour freshness, which makes these low-calorie muffins completely different from classic muffins.
Ideal for breakfast, afternoon snack or as a dessert. If you prepare them in silicone molds with Easter motifs, they are more than ideal for the festive table.

125 g wholemeal spelt flour or oat flour
1 1/2 teaspoons baking powder
10 g Frutilu instant drink Lemon (or flavor of your choice)
pinch of salt
2 eggs
100 ml coconut oil, melted
125 g Greek yogurt or cottage cheese
Directions:
- Preheat oven to 180 °C
- In a large bowl, mix wholemeal flour, baking powder, salt and Frutilu.
- In another bowl, beat together eggs, coconut oil and Greek yogurt (or cottage cheese).
- Pour the liquid mixture into the dry mixture and mix with a spatula.
- Grease muffin tins or silicone molds of any shape.
- Pour the mixture into the molds and place in the preheated oven and bake for 25 minutes or as needed.
Notes:
- If the mixture is too thick, thin it with a little milk.
- You can drizzle baked muffins with chocolate if you wish.
