Frutilu recipe: Protein cottage cheese waffles
If you love fluffy waffles that are full of protein and delicious, then this recipe will simply amaze you! Protein cottage cheese waffles are made with Frutilu instant drink chocolate, but of course you can also make them with any other – how about lemon waffles with Frutilu Lemon? They are extremely quick and easy to make, with no added sugar and perfect for anyone who wants a sweet treat without a guilty conscience. Make them for breakfast, snack or dinner.

225 g cottage cheese (full fat is best)
3 large eggs
1 teaspoon vanilla extract
1 1/4 cups flour (all-purpose or whole wheat)
1 teaspoon baking powder
1 tablespoon instant drink Frutilu Chocolate
5 tablespoons milk of your choice
3 tablespoons coconut oil (melted and cooled)
Directions:
- In a large bowl, mix dry ingredients: flour, baking powder and Frutilu.
- Put the cottage cheese, eggs, vanilla and milk in a blender or mixer and mix until smooth.
- Pour the mixture into dry ingredients and mix gently.
- Stir in the melted coconut oil. The batter will be thicker.
- Heat a waffle maker.
- Scoop out 1/3 cups of batter for each waffle.
- Bake for 3-6 minutes (depending on your waffle iron).
- Top with maple or agave syrup, add ice cream or whatever you like and enjoy!
Note:
- Baked waffles are also ideal for freezing.
